Singapore Noodles recipe 

The upcoming OzAsia Festival in Adelaide in September has inspired our chefs to share their recipes and create a new, exciting asian inspired menu this Spring.  

A sneak preview of the new menu items will feature as specials during September in the Spice Market Restaurant, located on the ground floor of Adelaide Rockford hotel.

Ingredients -

120g Vermicelli Rice noodles

1 medium carrot – julienned

1 small onion diced

4-5 stems brocollini chopped

½ to 1 chicken breast - chopped

½ tbsp oyster sauce

½ tsp salt

2 tsp sugar

1/3 tsp fish sauce

1 ½  tsps curry powder

½ tsp turmeric

½ tbsp garlic

2 eggs

3 tbsps chicken stock



Place noodles in boiling water for 10 mins

Heat oil in wok

Cook chicken until golden

Add garlic and onion, cook until soft

Add eggs

Add oyster sauce, salt, sugar, fish sauce, curry powder, turmeric, brocollini & carrot – cook for around 2mins

Add chicken stock and cook for another 3 mins

Drain noodles and add to wok

Toss all ingredients together and cook for 2 mins

Finished – Enjoy your meal!
